Patti's Potato Pie

1 lb ground beef
1 can cream of mushroom soup
2 pouches of instant potatoes
1 cup shredded cheddar cheese

In one pan, brown ground beef. Mix in cream of mushroom soup with browned meat. In separate sauce pan, make 2 pouches of instant potatoes according to the package. I used Butter, Cheddar & Garlic and a combination of the two. In a 8x8 glass baking dish, put half of the done instant potatoes on the bottom. Next put all the beef/soup combination on top. Then put the remaining potatoes on top. Top with 1 cup shredded cheddar cheese. Bake at
250 degrees until cheese is melted.

Cool N Creamy Potato Salad

1 Packet Cool N Creamy Cucumber Dip Mix (Available from Tastefully Simple and yours truly)
1/4 cup mayo
3/4 cup sour cream
4-5 red potatoes cooked, peeled and cubed
1/2 diced celery
1/2 - 1 seedless cucumber

Combine first 3 ingredients. Chill 2 hours. Place potatoes, celery and cucumber in a large bowl. Fold in cucumber dressing. Chill and Enjoy!

Strawberry Coffee Cake

Strawberry Coffee Cake

8oz Cream Cheese
1/2 cup butter, softened
3/4 cup sugar
1/4 cup milk
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 cups fresh strawberries/blueberries/peaches
1/4 cup brown sugar
1/2 cup chopped nuts (optional)

Preheat oven to 350 degrees. Combine cream cheese, butter, sugar. Beat until light and fluffy. Stir in milk, eggs, and vanilla. Sift together flour, powder, soda and salt. Add to cheese mixture; mix until smooth. Spread 2/3 of the batter in greased and floured 13 x 9 pan. Spread berries evenly over batter. Dot remaining 1/3 batter over berries. Mix brown sugar and nuts; sprinkle evenly over cake. Bake for 40 minutes. Serve warm.

Pineapple Pretzel Fluff

Pineapple Pretzel Fluff

Ingredients

1 cup coarsely crushed pretzels
1/2 cup Butter, melted
1 cup sugar, divided
1 8oz cream cheese, softened
1 20oz can crushed pineapple, drained
1 12oz cool whip, thawed

In a bowl combine pretzels, butter and 1/2 cup sugar. Press into a 9x13 baking pan. Bake at 400 degrees for 5 to 7 minutes. Cool. When cool enough, break into small pieces. In mixing bowl beat cream cheese and remaining 1/2 cup sugar until creamy. Fold in pineapple and cool whip. Chill until ready to serve. Stir in pretzel mixture just before serving.

Monterey Chicken

Monterey Chicken

4 whole chicken breasts - boneless/skinless
1 cup Catalina Salad Dressing
Monterey Jack Shredded Cheese

Marinate chicken breasts in Catalina Salad Dressing overnight. Grill chicken breasts until tender. Top with Monterey Jack Cheese. Place on broiler until cheese is melted.

Mac and Cheese Casserole

1 lb ground beef
1 box Macaroni and Cheese dinner (Kraft or similar brand)
1 can tomato soup

Brown ground beef in pan. Add any seasonings you want (I use Tastefully Simple's Garlic Garlic). In a separate pan, make macaroni and cheese according to box. When ground beef is brown and macaroni and cheese is done and assembled, pour macaroni and cheese in with ground beef and add tomato soup. Heat until warm throughout and serve.

Five Minute Chocolate Cake

For those days when you need a little chocolate:
Great for the office:
5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.Pour in the milk and oil and mix well...Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts.The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.EAT ! (this can serve 2 if you want to feel slightly more virtuous).

Baked Mostaciolli

Baked Mostaciolli
1 lb hamburger
1-15 oz can of diced or crushed tomatoes
1 26oz can of spaghetti sauce
1 large onion – diced (optional)
1 8 oz pkg shredded Mozzarella cheese
1 lb Penne noodles
1 cup (or more) Parmesan cheese
1 tsp Oregano (optional)
1 tbls sugar
Garlic powder to taste (I use Tastefully Simple's Garlic Garlic)

Brown onions and hamburger together and drain well. Cook Penne noodles to “al-dente” – drain well!! Cook down to thicken - spaghetti sauce and tomatoes with ½ cup of Parmesan cheese, Oregano, and sugar - add garlic powder to taste. Add cooked and drained hamburger and onions to sauce. In a large bowl mix noodles, sauce/hamburger mixture and shredded Mozzarella. Place in a well greased 9x13 pan – top with Parmesan and bake at 350 until hot. These can be made ahead and frozen – defrost and heat.

Wet Burrito Casserole

2 1/2 lbs ground beef
1 pkg taco seasoning
2 pkgs beef gravy mix
1 can (10oz) mild enchilada sauce
1 can (16oz) refried beans
1 can (8oz) tomato sauce
1 T sugar
1 pkg (8 count) large flour tortillas
2 pkgs (8oz) taco or cheddar shredded cheese
1 1/2 cup diced fresh tomatoes
1 cup shredded lettuce

Brown meat and drain. Stir in taco seasoning, beef gravy mix, enchilada sauce, beans, tomato sauce, and sugar. Spoot just enough mixture to cover bottom of 9 x 13 pan. Cut 2 tortillas and place on top of meat. Sprinkle with half of tomatoes and 1/3 of cheese. Repeat layers using tortillas, meat, tomatoes, and cheese. Top with lettuce and remaining cheese. Bake at 275 degrees for 25 minutes.

Nana's Nana Bread

From "Best of the Best from QVC" Cookbook:

Nana's Nana Bread

1 stick butter or margarine, softened
1 cup sugar
2 eggs, beaten
4 very ripe bananas
1 cup flour
Dash of salt
1 teaspoon baking soda
1 cup chopped nuts (optional)

Preheat oven to 375 degrees. Cream butter and sugar; add beaten eggs. Mix well. Add bananas, one at a time, and beat well. Add dry ingredients; blend well. Add nuts. SPoon into a greased 9x5 inch loaf pan, or two small loaf pans. Bake at 375 degrees for 15 minutes. Lower heat to 350 degrees and continue baking for 35-45 minutes, depending on size of pan. When cool, remove from pan. Cool completely and wrap in plastic wrap.
